Far down near the southern edge of Mexico, the Chiapas region is right on the border of Guatemala's Huehuetenango region, so the coffees share some similar traits. And, just like our OFT Guatemalan coffee, we roast these Mexican beans to a light roast as well. This coffee has a balanced body and features the fruity and nutty flavor notes associated with the growing region. The acidity is bright, but not overpowering, and the aroma is delicate and fresh.
- “Once I dialed in the grinder I was pulling very consistent shots. Because it is so fresh I rarely have to adjust the grinder for bean age. Not true w/ other beans. When I am getting to the end of the batch I just ad a gram to the portafilter to slow the pull for bean age. Love cbd ”
- “This coffee is wonderful. I have been buying it for years. Low acidity, rich chocolate background flavor, very fragrant. Our UPS guys always comment on how good their truck smells when they deliver our coffee. ”
- “I admit -- we are fastidious when it comes to coffee. It must start with whole beans, use filtered water, and be poured into a pre-warmed cup. Maybe I should say pretentious, as well as fastidious. That said -- we love Coffee Bean Direct's Mexican Chiapas and brew it every morning. The fact that it is organic and fair trade just adds to the joy of experiencing a cup of this wonderful coffee.”
