Far down near the southern edge of Mexico, the Chiapas region is right on the border of Guatemala's Huehuetenango region, so the coffees share some similar traits. And, just like our OFT Guatemalan coffee, we roast these Mexican beans to a light roast as well. This coffee has a balanced body and features the fruity and nutty flavor notes associated with the growing region. The acidity is bright, but not overpowering, and the aroma is delicate and fresh.
- “From one true coffee lover to another... you must try this coffee! I drink 5 to 7 cups of coffee a day and have for years. Up until now Coffee Bean Direct's Kenya AA has been my favorite. Organic Fair Trade Mexican Chiapas ranks right up with Kenya AA in smoothness, flavor, and richness. The fact that it is certified organic and is fair trade gives the Chiapas the edge.”
- “Once I dialed in the grinder I was pulling very consistent shots. Because it is so fresh I rarely have to adjust the grinder for bean age. Not true w/ other beans. When I am getting to the end of the batch I just ad a gram to the portafilter to slow the pull for bean age. Love cbd ”
- “This coffee is wonderful. I have been buying it for years. Low acidity, rich chocolate background flavor, very fragrant. Our UPS guys always comment on how good their truck smells when they deliver our coffee. ”
